Whats For Dinner Tonight-Cheddar & Cabbage Casserole & Speechless Sunday

Ingredients

1 small head of cabbage
1 small onion (i used white)-chopped
6-8 slices bacon, diced
2 t vegetable oil( i used olive oil)
3/4 cup milk(can use same amount of water instead)
1/2 cup mayo ( i used light and it tastes good)
pepper, to taste
2 cups bread crumbs
3 Tablespoons melted butter/margarine
1T parsley (i used Italian seasoning)
1 1/2 cups shredded extra sharp cheddar cheese ( i used colby-monterey jack)


Directions

Preheat oven to 375.Grease 3 quart casserole. Set aside. Cut cabbage into 4 wedges. Core and cut crosswise into thin strips.In large pot, cover cabbage with water. Bring to a boil ( lid on)then cook additional 10-12 minutes.( till tender)Drain well, set aside.
Saute onion and bacon in oil till onions are tender.

In separate bowl combine milk, soup, mayo,pepper and finished onion and bacon. Mix well. Add cabbage and again, mix well.

In another bowl, combine bread crumbs, parsley and melted butter.Blend well. Sprinkle 1/3 cup into bottom of casserole dish. Top with cabbage mixture. Sprinkle with cheese and top cheese with remaining bread crumbs.

Bake 45 minutes.
Serves 4


*My boys ate the heck out of this. It was the first time they ever had cabbage!!!! SO yummy!*
